The BEST White Chicken Enchiladas from Pinterest

I kept seeing this recipe all over Pinterest for the “Best” white chicken enchiladas from Pinterest and finally decided I need to make it to test it out myself. I made these a while back but am just now getting it up on our blog. The recipe came from here & I found it on Pinterest.

Above you can see the sauce as it is thickening, please ignore my dirty stove….
Chicken Enchiladas with Green Chili Sour Cream Sauce

Ingredients:
10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream (I used Reduced Fat)
1 (4 oz) can diced green chillies

Directions:
1.  Preheat oven to 350 degrees.  Grease a 9×13 pan
2. Mix chicken and 1 cup cheese.  Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute.  Add broth and whisk until smooth.  Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies.  Do not bring to boil, you don’t want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min and then under high broil for 3 min to brown the cheese.
I added salsa on top of mine for an extra kick and poured more of the sauce over the top. We thought this was so good and would definitely repeat this recipe.  In fact, I may have to add it to my menu plan for next week.  Have you tried it? Did you like it?

The heating unit went out on my dryer! The gentleman that fixes things around the house for us told us that he wanted to show us something and he went over to the dryer and pulled out the lint filter. It was clean. (I always clean the lint from the filter after every load clothes.) He told us that he wanted to show us something; he took the filter over to the sink, ran hot water over it. The lint filter is made of a mesh material – I’m sure you know what your dryer’s lint filter looks like.

WELL…the hot water just sat on top of the mesh! It didn’t go through it at all! He told us that dryer sheets cause a film over that mesh that’s what burns out the heating unit. You can’t SEE the film , but it’s there. It’s wha t is in the dryer sheets to make your clothes soft and static free – that nice fragrance too, you know how they can feel waxy when you take them out of the box, well this stuff builds up on your clothes and on your lint screen This is also what causes dryer units to catch fire & potentially burn your house down with it! He said the best way to keep your dryer working for a very long time (& to keep your electric bill lower) is to take that filter out & wash it with hot soapy water & an old toothbrush (or other brush) at least every six months. He said that makes the life of the dryer at least twice as long!

 

Publix: Before Coupons and Sales $154.75, After $49.20 Plus $10 PX Gift Card

Can you say A LOT of groceries!!!  Holy cow…it’s been forever since I’ve bought so much.  A good bit of it I didn’t really even buy because we needed it per se (not to say that it won’t all get used-waste not, want not), but because Publix had a great deal going on this week. There’s a coupon in the sales ad this week that if you spend $100 on groceries pre coupons, you get a $10 Publix gift card for free.  I did my best to get items that either gave me overage or were free more than usual just to make sure I got that gift card.

The items that had overage this week included the Phazyme tablets and the Tena pads.  The Tena pads had a $7/1 coupon they emailed if you signed up for alerts on their website, the product was only $5 and some change so I earned on that purchase. The Phazyme tablets were $3.49 and there were coupons on their website as well as $5/2 Publix coupons to combine w/ it for overage as well.

The Gorton’s fish products were BOGO & there was a Publix coupon in the advantage buy flyer for free Alexia rolls when you bought Gortons products. I added Gorton’s manufacturer’s coupons and Alexia manufacturer’s coupons to pay just $.75 an item for each of the Alexia and fish products.

I had a BOGO coupon for the razors and everything else was on sale or had coupons. I brought in $68.58 worth of coupons with me to the store!!! HUGE coupon week, love it!
