We just got back from paradise. Yes, a lovely vacation in paradise….also known as Bald Head Island. Post with pics to come soon and tons of recipes we made while there. With that being said, we were gone for about a week and were pretty much working with a bare refrigerator at home for me to replenish.

I’ve also decided for a month to do minimal carbs and no sweets just to get healthier and see how it affects my body. So, the game plan is that I can’t eat pasta, bread, or rice but I am allowing myself fruits and such. This means I’m pretty much shopping the perimeter of the grocery store. Even though I’m still buying mostly things on sale or that I have coupons for, I’m allowing us a $50 or so a week budget now instead of the normal $40 a a week budget.

I’m excited about this because it’s a new challenge to eat even healthier and get more creative with our budget and how to make it stretch. It’s forcing me to find new snacks and recipes. In fact, if you follow me here on Pinterest, you’ve probably noticed I’m adding tons of new recipes to my Healthy Heather board to give me an arsenal of recipes to choose from other than our eMeals subscription.

This week, the only things I purchased within the aisles of the store was sunflower kernels, BBQ sauce (that was on sale) & mayo that the hubs requested. I spent $54 total and got salmon & chicken. I saved $22.25. I had a few Publix store coupons from one of their membership clubs for $1/1 dairy item, $1/1 deli item, & $1/1 produce coupon. Pretty awesome coupons, huh?!
