I’ve always been a huge fan of icing, especially when it is icing on cupcakes! Here is my new favorite lemon cream cheese icing recipe- I usually use it on either lemon or white cupcakes. It is simple, easy, and delicious. Enjoy!
1 (8 oz) package cream cheese, softened
1/4 c. butter
2 tbsp lemon juice
2 tsp lemon zest
1 tsp vanilla extract
5 c. confectioners sugar
1. Beat cream cheese, butter, lemon juice, lemon rind, adn vanilla together until smooth and fluffy.
2. Add confectioner’s sugar 2 cups at a time. Beat until creamy.
3. Add more confectioners sugar or juice as needed until icing reaches desired consistency.
Makes about 3 1/2 cups.
