I honestly am shocked that I am just now putting this recipe up. It was one of the first appetizers I made on the regular when DH & I first got married.  It’s easy, relatively healthful as far as apps go, and I can pretty much eat half a bowl by myself.  I got the recipe from DH’s “Aunt Cher” who is one of his family’s lake friends.  We just made it this week for the National Championship as you can tell maybe since it’s on my Auburn platter. I should have taken a pic of the platter minus all the chips covering it up because it’s super cute!

All the ingredients you will need are pictured above….granted, we doubled the recipe so that’s why it looks like so much. The original plan was to go to Savvy Mom‘s house to cheer on our Tigers to victory but since that didn’t happen (Thank you, crazy ice/winter storm of 2011)….we hung out close to home w/ a couple of friends who could barely even eat a 1/4 of how much we made.  Anyway, back to the point….the recipe or Cher’s Bean Dip as we call it!


Ingredients:

  • 2 envelopes Good Season Italian dressing
  • 2/3-1/2 c vinegar
  • 2/3-1/2 c oil
  • 2 can black beans (rinsed & drained)
  • 1 can diced tomatoes (drained)
  • 1 can she peg corn (drained)
  • 1/2 c diced jalapeno (drained, chopped)
  • Add green yellow and/or red pepper amount of your choice
Mix well and there you have it; a quick dip that’s party ready. I would advise you to make it the night before you serve it though because it’s better once it “seasons through.”
