Ingredients:
1 lb ground beef
½ bell Pepper diced
½ small onion diced
1 egg
½ c bread crumbs
½ c shredded cheese (any kind)
1/3 cup ketchup (reserve some for top–trust me you’ll want to use even more than this so you have plenty of ketchup)
1 t dry mustard (optional)
Directions:
Preheat oven to 400 degrees
Mix all ingredients in a large bowl
Patty into loaf
Line pan with aluminum foil and put on pan
Smear top with leftover ketchup (can also make a mixture ketchup and brown sugar–this is a must do! The sauce is SO good)
Cook for 20-30 minutes
This is seriously one of my favorite comfort foods now….this and homemade macaroni & cheese. Topped off with some homemade oatmeal chocolate chip cookies for dessert or maybe apple pie. OK, this list could clearly go on & on. Enough about me, what are yours?!

I love meatloaf and so do some of my family – others not so much. I don't use a recipe, just throw some of this and that in. I have never added peppers – will have to try that next time.

It's so easy to fudge on a meatloaf recipe. I remember once that a friend was making meatloaf, and discovered that he had no crackers or bread to use in it, but found a bit of raisin bran in the bottom of the cereal box and threw that in. I thought, "Yuck!", but the meatloaf was delicious! I wouldn't use raisin bran now, but the point is that you can pretty much add whatever you have or get creative and turn out a good end product.

Loved the recipe. Made it twice and have been a hit at dinner.
I put this meatloaf in the oven at 400 . After 30 minutes, the internal temp. was only 140 dgreees. I turned the oven down to 350 and left it in the oven for another 15 minutes. At this time the internal temp was 160 degrees. Since we like our meat well done, I turned off the oven and left the meatloaf in the oven for 10 more minutes. Looks good -will let you know later how we liked it !
Very Good recipe – I followed the original recipe except- I added 1/2 tsp. salt and pepper. I only put in 1/2 tsp. dry mustard.
Bake for 30 minutes at 400. Reduce heat to 350 and bake for 20 more minutes.
