FINALLY! I’m posting my Garlicky Guac recipe I’ve been promising for quite some time. This is based on Rachel Ray’s version and it is the 1st guacamole I ever liked. I always thought it was gross, but then I found this one and I’ve broken in easily into my new found love for guac. So, here it is!
Ingredients:
2 lrg ripe avocados
1/2 sm onion, finely chopped
1 garlic clove (I’ve been known to get lazy and use garlic pwdr)
1 t salt
1/2 T lemon juice (or to taste)
1/2 sm tomato, finely chopped
Directions:
Halve the avocado & discard the pit. Scoop the flesh into a sm bowl & mash well. On a cutting board, chop the garlic then sprinkle w salt. Using the side of your knife & applying pressure w the heel of your hand, mash the garlic & salt into a paste. Add paste, onions, tomato, & lemon juice to bowl, mix well until smooth. Season w/ pepper. (Tabasco or chili pwdr optional)
Serves 4, I would definitely double it as I like to have a few rounds for everyone and leftovers for moi!

When I indulge in guacamole, I like it packed full of garlic! Actually, I really like it with tomatoes and onion too. This is a perfect recipe!:)ButterYum
