I was introduced to this recipe from my roommate in college’s mother. She served it one time while we were at her house in Atlanta and ever since then I’ve been hooked! I usually double this recipe because I go through it so fast, I literally eat spinach salad about 4 or 5 times a week for lunch because I like it THAT much. The great thing about this is you probably already have most of the ingredients in your pantry which makes it a cheap meal as well!
1/4 c Splenda
1/4 c Apple cider vinegar
1/2 c Vegetable oil
1/4 t garlic pwdr
1/4 t celery seed
Mix well in lidded container. Chill in refrigerator, and serve over spinach. I, sometimes, add boiled eggs as shown above or feta cheese to get a little extra energy giving power. Hope you like it as much as I do! I especially enjoy it in the summer as it is a light and cool meal.
