This was dinner tonight and it was so tasty! DH & I made almond chicken and put it on top of a spinach salad and topped it off with some of the balsamic vinaigrette I got today. Then we just threw together one of our Knorr sides, Teriyaki rice, that I got for next to nothing at Publix last time it was BOGO. We got this recipe from some of our good friends from our small group. This recipe was so quick and easy that I thought you all might enjoy it as well. I love finding new simple recipes, so please share if you have one of your own you’d like to tell me/help me out with!
Almond Chicken:
chicken strips
1 egg white
chopped almonds
Italian bread crumbs
Chop almonds & add to bread crumbs in a bowl. Dip chicken in egg, then bread crumbs. Cook chicken 3-4 minutes on each side in olive oil until golden brown.
See? Simple! That’s what I like…simple and healthy!
