Eric (my DH) is in town this week which is nice & though I’m sick, I’m hoping with his help to be able to at least cook a few meals since he’s been home so rarely during the week due to work. After January though, I should be able to regularly be having Menu Plan Mondays and have him here.
Monday: Breakfast Casserole, grits (love this southern classic), and cinnamon rolls
Recipe: 8 eggs, 2 c. milk, 7 slices white bread (no crust), 1 t. salt, 1 t. mustard, 1 lb. Jimmy Dean Sausage cooked, 1 1/2 c. shredded cheddar. Beat eggs, add milk, sausage, bread & seasonings. Bake at 350 for 45 minutes.
Tuesday: Leftover breakfast casserole
Wednesday: Dinner out with friends who are in town
Thursday: New Year’s Eve=appetizer for party! Warm swiss & bacon dip from Vera Bradley Cookbook
Friday: Chicken & spinach pasta bake
